Cream Cheese Banana Nut Muffins.....Moist and Tasty!!



Cream Cheese-Banana-Nut Muffins

3/4 cup butter (yes butter)          8oz fat free cream cheese (see???)    2 cups sugar       2 large eggs
3 cups all purpose flour              1/2 tsp baking powder, baking soda and salt (I used 1/4 salt)
4 mashed medium bananas        1 cup toasted and chopped nuts of choice                   1/2 tsp. vanilla
1/2 tsp cinnamon (optional)

Cream butter and cream cheese.  Add one egg at a time until blended. 
Combine dry ingredients, and gradually add to butter mixture, beating at low speed.
Stir in bananas, toasted nuts, and vanilla.
Spoon evenly into 24 paper lined muffin cups.......................(I actually got 27 muffins!!)

Bake at 350 for approx. 25 minutes.

NOTE:  I used 1 cup brown sugar and 1 cup white.
               For one of the cups of flour I used a mixture of oat bran and flour...(extra fiber)

I had some left over streusel topping from another batch of muffins and put that on, also!!
